“Protein pudding” usually means protein powder, which just isn’t really my thing. I actually love eating cottage cheese straight-up, or with fruit and granola mixed in, but this blended pudding tastes like dessert and is perfect on days when I want something a little sweeter to get me going. It has just under 200 calories per serving, so for breakfast I either eat the whole two-serving batch, or drizzle on some extra peanut butter.
This pudding has no protein powder, and still packs 14 grams of protein for less than 200 calories.
Ingredients:
- 14 large strawberries, cored, chopped
- 3/4 cup lowfat cottage cheese.
- 1 tablespoon natural peanut butter
- 1 tablespoon organic honey
- 1/4 teaspoon vanilla extract
Directions:

In a blender or food processor, puree all ingredients until smooth.

For a thicker consistency, freeze 15 minutes before serving.

Store remaining serving in the freezer.
